Vanilla, Rose & Orange Chia Seed Pudding

Start the weekend right with this delicious bowl of flavor and bliss! Manifest a powerful day with chia, an ancient superfood. These tiny seeds expand up to 10x their weight in liquid, helping you stay full and satisfied for hours. Filled with plant-based protein and fiber, they will banish bloat and aid in digestion. The cherry on top? Despite their minuscule size, chia seeds are a potent source of brain-boosting omega-3 fatty acids and loaded with various micronutrients.


Vanilla, Rose & Orange Chia Seed Pudding (Makes 2 large or 4 small servings)


Ingredients:

  • 1 cup coconut milk

  • 1/2 cup nut milk of choice

  • 1/3 cup chia seed

  • 1 tsp vanilla extract

  • 1 Tbsp rose water

  • ½ orange, juiced

  • ½ Tbsp Orange Zest

  • 1 Tbsp maple syrup

  • Pinch Himalayan salt

  • 1/2 cup organic strawberries, sliced

  • 1/4 cup pistachios, chopped

  • 2 Tbsp cacao nibs


Directions:


1) In a 16 oz mason jar, add coconut and nut milk, chia seed, vanilla, rose water, orange juice, orange zest, maple syrup, and salt. Place lid on jar and shake vigorously to combine.

2) Place in refrigerator for 10 minutes, and then give another vigorous shake.

3) Let rest in refrigerator for 3-5 hours or overnight.

4) Divide into 2 bowls. Top with sliced strawberries, pistachios and cacao nibs before serving. Leftovers will keep in the fridge for up to 5 days.
