Salad:
â˘2 c. mixed greens
â˘1 Tbsp red onion, shaved
â˘1/2 Persian cucumber, sliced
â˘1/4 c. cherry tomatoes, halved
â˘3 kumquats, sliced
â˘1-2 dates, chopped
â˘4 oz. langostino, cooked
â˘1 Tbsp goat cheese, crumbled
â˘1 Tbsp mint, thinly sliced
Dressing:
â˘1 Tbsp olive oil
â˘juice of 1/4 orange
â˘1/2 Tbsp champagne vinegar
â˘1/2 tsp maple syrup
â˘1/2 tsp dijon
â˘Himalayan salt and pepper, to taste
*Combine in a jar and shake vigorously.
*Arrange salad ingredients on your plate and drizzle with vinaigrette. Enjoy!
