Chia Seed Superfood Puddings

Happy Sunday Friends! I have created a super simple and adaptable superfood chia seed pudding for you to try this week. This recipe can easily be doubled and made ahead of time for a nutritious quick breakfast, snack, or dessert. I have added in a sneaky special ingredient to give it an extra boost of health and alkalinity...spinach! Yes, sounds strange and a little weird, but it's actually fabulous and totally undetectable. For picky pint size eaters, you might want to call it dinosaur pudding or goblin goop to avoid any ingredient kick-back.


Feel free to use any kind of non-dairy or dairy milk you prefer, and swap out superfoods listed for one of your favorites, or just leave them out all together! The fun is in the toppings. Have fun creating your favorite combo of fruit, nuts, coconut shreds, chocolate chips, cacao nibs, granola, almond butter drizzle, cinnamon...the sky's the limit! Vanilla Superfood Chia Seed Pudding (serves 2)


Ingredients:


· 2 cups non-dairy milk (coconut is my favorite)

· 2 giant handfuls spinach

· 1 tsp organic matcha green tea powder*

· 1 pitted date

· 6 drops vanilla sweet leaf stevia

· 1 tsp pure vanilla extract

· 6 Tbsp white chia seeds (black chia seeds work just as well)


Directions:


1) Combine all ingredients except chia seeds in a high-powered blender. Blend until completely smooth.

2) Pour mixture between two 16 oz mason jars and then add 3 Tbsp chia seeds to each jar. Put lid on jar and seal tightly. Shake jar vigorously and then put in the fridge 10-15 minutes

3) Pull jars out of fridge and use a small whisk or spoon to stir the mixtures and break up any chia seeds that are clumping together at the bottom of the jar.

4) Put back in fridge to let thicken for at least an hour, but preferably several.

5) Pudding with thicken to a tapioca-like texture as it sits. Once thickened to your liking, add your favorite toppings. Some favorites are fruit, cacao nibs, cinnamon, granola, dried fruit, shredded coconut, nuts, almond butter or mini chocolate chips.

6) Enjoy!


*Note: Leave matcha powder out if making for children.



Cacao + Reishi Superfood Chia Pudding (Serves 2)


Ingredients:

· 2 cups non-dairy milk (coconut is my favorite)

· 2 giant handfuls spinach

· 4 Tbsp Navitas Cacao + Longevity Blend (or cacao and reishi powders)

· 1 pitted date

· 1 Tbsp maple syrup

· A pinch of pink Himalayan salt

· 6 drops vanilla sweet leaf stevia

· 1 tsp pure vanilla extract

· 6 Tbsp white chia seeds (black chia seeds work just as well)


Directions:

1) Combine all ingredients except chia seeds in a high-powered blender. Blend until completely smooth.
